Yummy Potato Salad

I don't make potato salad very often because it takes so long to make and I always seem to cook the potatoes a little too long so they are too soft.  But I got this recipe from Shaun's uncle and it is so good and easy. I hope you like it as much as we do.

Potato Salad

8-10 large potatoes boiled until done, drain water, put lid on pot & let steam until they can be skinned and peeled

8 hard boiled eggs (I slice 2 and put on top and the rest I cut up and put in the salad)

Dressing
2 cups Salad Dressing (not Mayo)
1 cup sour cream
1 tablespoon vinegar
1 tablespoon sugar
3 tablespoons mustard
1/2 cup sweet pickle relish

Add salt, chopped celery, and chopped green onion to taste

Soccer, Bikes, Races

 Preston with his Sheriff badge that grandma bought him.  He was Sheriff Woody all day

 This was Shelby's first year playing soccer, she did great, her favorite position was goalie, she loved to dive on the ball to stop it.

 There were 2 other girls on her team that are also in her dance class.  I feel sorry for the little guy between them all talking.
 We took the kids to the church to practice them riding their bikes, Shelby got a big kid bike for her brithday so we needed to try it out since we don't have sidewalks or a nice drive way.  They all did great.

Preston was a little scared to ride in the parking lot but after watching his sister a bit he decided it was ok, there was no stopping him after that.

Shelby's Birthday

Shelby turned 5 in March and had her first friend birthday party.  We invited her girl friends from her primary class.

The Treehouse Museum

 We went to the Treehouse Museum on St Patrick's Day with cousins.  It was a lot of fun, but note to self, if you go on green day, don't dress your kids in green, it was hard to keep track of them with all the green around. For lunch we went to 5 guys burgers and fries and then went back for some more playing. They definately got worn out.

Goodbye Grand Am

Well after having my car almost 15 years and driving it just over 270,000 miles, we sold it. We thought we better get rid of it before it completely broke down and it wasn't worth anything so we sold it for $500. Shaun and I aren't mechanical at all and we didn't want to keep putting in $100 here and a $100 there for little things that went wrong. That car never left me stranded and it had a great AC. I will miss seeing it in the driveway.

Sydney was pretty sad to see it go, but then I explained why and that we were going to get a replacement and she was a lot better about it. She was that way when we sold the Santa Fe too, I'm suprised she gets so attached to a car, she is my emotional one. Now we are on the hunt for a new run around car that will hopefully last us just as long.
